Fish Friday Au Gratin Potatoes

This is a recipe for a delicious Casserole Dinner. The flavors permeate the entire dish. It is a one baking dish dinner (preparations and baking and serving) that can be served in the same dish. So clean up is a snap. Serve with Broccoli or any vegetables of choice. Crab cakes, Stuffed Crabs or Salmon Patties, (don't forget the hot sauce, I recommend Crystals it is light and mild) would enhance this dish, also.
2 lb of fish fillets (fresh or thawed) I like Maui Maui for taste and texture)
4 russet potatoes, sliced into 1/4 inch
1 onion, sliced into rings
salt and pepper to taste
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
1 cup milk
1 1/2 cups shredded Cheddar cheese
Preheat oven to 400 degrees F (200 degrees C). Butter a 1 quart casserole dish.
Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with onion slices, and add a layer of fish fillets.
Sprinkle with a layer of shredded cheese. Continue in this manner layering potatoes, fish fillets and sprinkle of cheese until you reach near the top of the dish.
Pour in the cup of milk
Chip the butter or margarine on top of the casserole and sprinkle more cheese on top.
Salt and pepper to taste.
Cover dish with lid or aluminum foil.
Bake 1 1/2 hours in the preheated oven.
