Fish Friday Au Gratin Potatoes

This is a recipe for a delicious Casserole Dinner. The flavors permeate the entire dish. It is a one baking dish dinner (preparations and baking and serving) that can be served in the same dish. So clean up is a snap. Serve with Broccoli or any vegetables of choice. Crab cakes, Stuffed Crabs or Salmon Patties, (don't forget the hot sauce, I recommend Crystals it is light and mild) would enhance this dish, also.

Ingredients

  • 2 lb of fish fillets (fresh or thawed) I like Maui Maui for taste and texture)

  • 4 russet potatoes, sliced into 1/4 inch

  • 1 onion, sliced into rings

  • salt and pepper to taste

  • 3 tablespoons butter

  • 3 tablespoons all-purpose flour

  • 1/2 teaspoon salt

  • 1 cup milk

  • 1 1/2 cups shredded Cheddar cheese

    Preheat oven to 400 degrees F (200 degrees C). Butter a 1 quart casserole dish.

  • Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with onion slices, and add a layer of fish fillets.

  • Sprinkle with a layer of shredded cheese. Continue in this manner layering potatoes, fish fillets and sprinkle of cheese until you reach near the top of the dish.

  • Pour in the cup of milk

  • Chip the butter or margarine on top of the casserole and sprinkle more cheese on top.

  • Salt and pepper to taste.

  • Cover dish with lid or aluminum foil.

  • Bake 1 1/2 hours in the preheated oven.

  •  Voile! Bon Appetit!!!
